Shannon Jones

Board Member

Shannon teaches in the Department of Nutrition and Integrated Physiology at the University of Utah and is the Project Lead for the University of Utah Center for Community Nutrition’s interventions for individuals and families facing homelessness. She works on a variety of food security, food access, and health equity initiatives on campus and throughout the community, such as an advisor to the University’s campus food pantry and the Food Recovery Network student group, a member of the College of Health’s Equity and Diversity Committee, co-creator of a nutrition and sustainability course for the farmer training program at the Oxbow County Jail, and co-creator of Utah’s Higher Education Food Task Force. She is also one of the University of Utah’s few Sustainability Scholars. In her free time, she enjoys backpacking, hiking, reading, and exploring the natural and human histories of Utah and the Western U.S.
