Summit County Food Rescue Coordinator
Shelby is a Midwesterner turned Utahn who moved here after college and quickly put down deep roots in the Summit County community. Her career began as a local educator before expanding into sustainability work as the Sustainability Coordinator for the Park City School District. Over the years, she has collaborated closely with organizations such as Recycle Utah, Summit Community Garden/EATS, the Park City Community Foundation, Spoil to Soil, Momentum, and Wasatch Resource Recovery (to name a few)—work that strengthened her commitment to practical, community-driven environmental impact.
Her passion for waste reduction grew from her own health journey and was amplified by local sustainability leader Mary Closser. Living in the mountains has only deepened her belief that we are temporary stewards of this place, responsible for ensuring that future generations inherit a community as healthy and vibrant (if not healthier and more vibrant) as the one we enjoy today.
As Food Rescue Coordinator, Shelby is excited to expand Summit County’s food rescue network by forging partnerships, reducing waste, and ensuring surplus food reaches those who need it most. Outside of work, she’s a true mountain gal—living in a cozy cabin, traveling with her furry side kick and rooftop tent, cooking, and spending time with the ones she loves most. She’s grateful to call Summit County home and honored to help build a future where food is valued, shared, and never wasted.
